
Introduction
Fresh leafy vegetables usually lose firmness within several hours after harvesting if they are not supplied with sufficient water. In this simple observation, two groups of water spinach were placed in separate cups. One cup contained ordinary tap water, while the other contained water treated with the YAMIZU Water Enhancement Device. The purpose of this observation was to record any visible differences in recovery over time.
Test Method
Two identical transparent cups were prepared and filled with the same amount of water.
Fresh water spinach harvested on the same day was divided into two equal groups.
- Left cup: Ordinary tap water
- Right cup: Water treated with the YAMIZU Water Enhancement Device
The observation began at 06:15 AM and continued for approximately 7 hours and 20 minutes under the same indoor environment without additional treatment.
Observation
After approximately seven hours, both groups showed signs of wilting.
However, the water spinach placed in the YAMIZU-treated water showed visible recovery in several leaves.
Some leaves regained firmness and stood more upright, while the sample in ordinary tap water remained noticeably wilted.
These observations were recorded photographically for comparison.

Conclusion and Discussion
This simple observation suggests that water quality may influence the short-term freshness recovery of harvested leafy vegetables.
The photographs shown in this article document one observation conducted under specific conditions.
Additional testing with larger sample sizes and controlled experimental methods would be valuable for further evaluation.
